What comes to mind when you chance upon these exotic yet poetic names: Bai Hao Yin Zhen (literally, silver needle ), Bai Mu Dan (white peony) and Shou Mei (literally, longevity eyebrows)? Are they flowers? The truth is, these are varieties of white tea.
Fresh leaf buds picked on a sunny day when the northerly wind is blowing are spread on a clean surface for the moisture to evaporate slowly. They are then transformed into leaves covered by white hair. These white teas -- Silver Needle, Bai Mu Dan and Shou Mei –give a crystal-clear infusion with an elegant and lingering aroma.
White tea exudes such fragrance that reminds us of the crisp, cool air deep in the mountains. The alluring yet subtle fragrance flows through our body like a whispering stream, refreshing us physically and mentally. It makes a great thirst-quencher and refresher on a scorching hot day.
Sometimes, we just have to step back in order to realign the pace of our life. It is not just about rushing to get things done – we will also need to take time out and enjoy those moments of inner peace.
