茶具持拿法 The Way To Hold The Tea Ware

茶具的使用,沒有說一定要怎樣持拿才對,但基本原則離不開衛生、安全、手勢實在及運用起來順暢。沒有所謂絕對的持拿茶具方法,因很多茶具的造型、大小在制作時都會因需要而經過稍微調整,只要使用時留心茶具的細微變化,隨之變動手勢就可以了。另一點要注意,同一種茶具有人用左手、有人用右手,惟無論用那一只手,各種方法如持、提、握動作仍是不變的。以下簡介一些茶具的持拿法:

There is no hard and fast rule as to the way one should hold the tea ware. The guiding principles would be hygiene, safety, practicality and smooth flow. There is no absolute way in holding the tea ware, as the design and size of the tea ware may vary according to needs. A rule of thumb is to observe the design and size, and adjust the gesture accordingly. A user may be left-handed or right-handed; nonetheless, the way to hold, lift and grasp a piece of tea ware is basically the same. Here are a few ways as to how we may hold the tea ware:

蓋碗 Lidded Tea Bowl (Gaiwan):
(A)蓋碗當泡茶器來用時,拇指與中指定點在碗邊緣的南北方向,把碗蓋子斜置,留出一道縫隙,大小足以出水但可隔著茶渣,食指按著蓋上壺鈕,就這樣利用三指提起蓋碗來出湯,托可留在原位不動。
持拿蓋碗要預防燙手,需注意下列幾點:造型、容量、蓋鈕、手勢。
(A) The gaiwan, when used to brew tea in place of a teapot, should be held around its rim with the thumb and middle finger facing each other. With the lid slightly tilted, leave a gap for decanting the tea infusion without letting the tealeaves out. Hold the lid in position by pressing the index finger against the dimple of the lid knob. The saucer should stay in its place.
To avoid burnt fingers, pay attention to the shape, capacity and the lid knob of the gaiwan, and the way you hold it.


造型:蓋碗要寬口,碗身口與蓋子邊的距離太窄,茶水容易溢出。
容量:沖泡時倒入蓋碗的熱水只需八分滿,換言之如果蓋碗的實際容量是120cc,投放茶葉時是以扣掉兩分後的96cc來計算茶量,否則茶葉太多水太滿,會抓不住蓋碗的。
蓋鈕:蓋鈕是凹進去的,故蓋鈕要做得離蓋子的面高一點,如蓋鈕離蓋短,手按在凹處會燙。
手勢:出湯時會先將蓋子打開一條縫,傾斜置放碗上,應避免過于傾斜,否則水的熱氣會從縫中冒上來,手心就會被燙。

Shape: The gaiwan should be wide-rimmed. Spillage is likely if the distance between the rim of the bowl and that of the lid is too narrow.
Capacity: Add hot water for brewing until the gaiwan is fourth-fifth filled. For example, if the full capacity of the gaiwan is 120cc, adjust the volume of tealeaves so they are just right for 96cc of tea infusion. Too much tealeaves and water makes it difficult to grip the gaiwan.
Lid knob: The knob has a dimple on top for the index finger to rest on. Choose taller knobs to eliminate the chance of the index finger being scalded.
Gesture: Tilt the lid against the gaiwan, leaving a gap just enough for decanting the infusion. Avoid tilting it too much; otherwise the ascending steam will hurt the palm.

(B)蓋碗當作個人飲用器時,用食指、拇指與中指扣著蓋碗的托,就可提起一套的蓋碗,托時食指在上、拇指與中指在下,另一手用拇指與食指掀開蓋子,便可品茶了。
(B) When the gaiwan is used as a cup, use the thumb, index and middle fingers to grip the saucer in order to lift the entire set of gaiwan. Note that the index finger should be on top, and the thumb and middle finger supporting the bottom of the saucer. Use the other thumb and index finger to lift the lid, and sip the infusion. 

 

茶海 Tea Pitcher:
(A) 開口茶海有側把的,用拇指、食指、中指提壺把的上端即可。
(B) 無把或圓圈,打開虎口用拇指、食指持著盅口南北方向的邊緣,其余手指托著食指,手腕轉一下就可倒茶。
(C) 有蓋茶海,用拇指與食指握緊食指持著盅口南北方向的邊緣,另一手用食指按著蓋鈕,以免在倒水時蓋子會掉落。

(A) Open-mouthed pitcher with handle: Lift the pitcher by holding the upper part of the handle with the thumb, index and middle fingers.
(B) For pitcher without handles, lift the tea pitcher at the rim with the thumb and index finger in opposite position, forming an open web space in between. Tuck the other fingers into the palm of the hand to support the index finger. Turn the wrist to pour out the tea.
(C) Lidded pitcher: Grip the rim of the tea pitcher with the thumb and index fingers facing each other; use the other index finger to press against the lid knob to avoid the lid from dropping. 

壺蓋 Pot Lid:

拇指與食指捏著壺蓋上的壺鈕,提上來即可。壺蓋放下時要輕、要穩,因壺蓋與蓋置觸及之處稱爲子口,是非常薄的,容易敲破。

 

Lift the lid by pinching the lid knob with the thumb and index finger. Place the lid on the lid saucer gently yet steadily. This helps avoid breakage as the flange of a pot lid is thin, and hence, fragile.  

 

茶杯 Teacup:

用拇指與食指握著茶杯南北方向的杯沿,中指托著杯底,品茶時用中指上下調動茶杯即可。

Hold the cup with the thumb and index finger wrapping around the rim. Support the bottom of the cup with the middle finger. When drinking tea, use the middle finger to tilt the cup.

 

杯托 Cup Saucer:

用拇指與食指扣著杯托邊緣,其余手指收攏,中指托著食指即可。

Secure the saucer at the rim with the thumb and index finger while tucking the other fingers into the palm of the hand; the middle finger should lend support to the index finger.

 

茶罐 Tea Caddy:

打開虎口,拇指及食指等其余手指抱著茶罐尾端,用手腕力量調動茶罐。

With the thumb and index finger forming an open web space in between, hold the tea caddy with the other fingers wrapping around the bottom of it. Tilt it by turning the wrist. 

 

茶則 Tea Scoop:

用拇指與食指握著茶則頂部,取茶、倒茶時向前傾。
Hold the top end of the tea scoop with the thumb and index fingers. Tilt it when scooping and pouring out tealeaves. 

茶荷 Tea Receptacle:
茶荷造型一位位置爲茶葉出口處、另一位置爲手把處,用虎口抱著手把處邊緣。傳遞時,將茶荷放在另一手的掌心上,向內往外移轉,使另一手的虎口可握住。
 A tea receptacle has a rounded end where we hold it, and a narrower, slightly protruding end for pouring out tealeaves. Hold the tea receptacle at the rim with the thumb and index finger forming an open web space in between. When passing on the tea receptacle, place the receptacle on the palm of the other hand, turning it outwards, and hold it with the other hand, with the web space open between the thumb and index finger.

 

茶簽 Tea Pick:

以拇指與食指吊起茶簽即可。

Lift the tea pick with the thumb and index finger.

 

茶匙 Tea Scraper:

用拇指與食指橫向持拿茶匙2/3的尾端。
Hold the tea scraper horizontally with the thumb and index finger 2/3 down the length of the scraper.

 

茶夾 Pincer:

拇指按住茶夾一方,處于橫向狀態。食指由外往裏壓住茶夾,中指緊挨著食指,鈎住茶夾調控夾子的“開關”。
Use the thumb and index finger to grasp the pincer horizontally, with the middle finger right next to the index finger. Open and close the pincer by adjusting the grip. 

 

煮水壺 Stove & Kettle:

提梁式,其方法是用食指及以下手指提起拱橋式的壺把,拇指按著拱橋一側,另一只手的食指按住蓋鈕,其他四指收攏。
With the thumb presses down and the other fingers tucked into the palm of the hand; grip a vertical side of the overhead handle of the stove. Use the other index finger to hold the lid knob in place.


茶巾 Tea Towel:
茶巾的取拿與折法:茶巾有縫隙的一面朝向主泡者放置。取拿時食指等四指按著茶巾上,拇指托著茶巾底部,順勢往泡茶者正前方拉過來再提起則可。

The way to access and fold a tea towel: Place the towel with the open edge towards the brewer. Access the towel by placing the thumb underneath and the other fingers on top of it. Gently pull the towel towards the brewer.


折法:茶巾分四等份,兩邊對齊中線折疊。再分四等份,兩邊對齊中線折疊。整好壓平。
The way to access and fold a tea towel: Place the towel with the open edge towards the brewer. Access the towel by placing the thumb underneath and the other fingers on top of it. Gently pull the towel towards the brewer.

Folding: Lay the towel out on a flat surface, lengthwise. Bring the left and right edges of the towel to the centre. Align and fold. Repeat. Smooth out with hands.
