五觉茶会的茶会形式

五觉茶会是用感受能力来体验茶文化的茶会,运用听觉、视觉、嗅觉、触觉、味觉同时专注之能量,让时间暂缓,增加反应,凝聚一份安静的心情来品味茶道。

五觉茶会的形式分为4步骤,第1步骤,序曲:洗手。第2步骤,名为入场:熏香。第3步骤,名为中场:醒神。第4步骤,完结:赏茶。

形式说明:

1.洁手:
  • 与会者在约定时间排队进入会场,会场入口处备置“茉莉花茶”,茶艺师用杓盛“茶”给与会者洁手,洁手后用纸巾擦拭,将纸巾置入木盒。

2.熏香:
  • 与会者取一白瓷碗,用三个根指拿一点茶叶置入碗内,将碗递过去水龙头加热水半碗,随意入座。
  • 坐好后,用双手环抱着碗,将头低下,张开眼睛和鼻子,让蒸发上来的茶香气与热气熏香。(如有眼镜先脱下。)
  • 与会者熏香时不说话。熏香完毕,与会者可就碗喝几口,然后把碗放回原处。

3.醒神:
  • 与会者取一白瓷杯,用两根手指拿少许茶叶放杯内,泡茶师给杯添入热水,浸润茶叶。
  • 与会者在茶叶上加两滴酱油,拿一支牙签,回座。
  • 过一会,待茶叶舒展后与会者将茶叶放入嘴巴,细细咀嚼才吞咽。然后把牙签放杯子里,把杯子放回原处。

4. 品茗-茶道展演:
  • 与会者入座。
  • 请出茶艺师们。
  • 茶艺师们入席,采用“现代泡茶法”程序泡茶,与会者欣赏沖泡艺术的过程。
  • 茶艺师们将最好的茶汤作品呈现,奉上给与会者品茗。
  • 与会者接到茶后,可开始品赏:一.闭上眼睛嗅闻茶香,二.观赏一下茶的汤色,三.小口小口把茶含着啜饮,慢慢享用茶的香味。
  • 这样泡茶、奉茶、品茶3道过后,助理将品杯收起,交给茶艺师。茶艺师将品杯归放茶席上。
  • 茶艺师鞠躬离席。
  • 品茗-茶道展演结束。




五觉茶会的茶会理念

1.洁手:
一.洁手的茶用玻璃缸盛放,金黄色茶水晶莹可爱,盈盈流动,观赏时可感受一股活力,看着很舒服。
二.视觉上的美丽,可令人在瞬间转换心情,平伏浮躁不安,以愉快心情参加茶会。
三.以茶水淋手时,茶香阵阵散发,闻着好清新,精神一爽。
四.茶水之前要备好摊涼,以清涼茶水轻轻抚摸双手,润湿双手,快意一直透澈心底,可消暑解热气。
五.茶水可助双手洗去灰尘,维持卫生。

2. 熏香:
一.以温热茶气熏眼睛,可纾解疲劳与压力。
二.以温热茶香熏鼻子,让香气进入身体,让精神充电。
三. 熏香时保持静默不说话,那才能让眼睛、鼻子更专注享用茶气、茶香。
四.耳朵聆听安静,身体才得到完全放松。放松可增加能量。
五.茶的热气蒸发完毕,可适量啜饮茶水,补充水分滋润身体

3. 醒神:
一.浸湿茶叶,醺沾一点酱油放入嘴吧咀嚼。
二.清苦茶汁从鲜芽头溢出,与酱油混合成一股有层次的滋味,唤醒味蕾的感觉,让人清醒、愉快。

4. 品茗-茶道展演:
一.欣赏茶道艺术家为茶而设置的茶席,了解茶席上各种茶器与茶搭配的效果。
二.欣赏茶道艺术家的冲泡艺术,了解各种茶的不同茶法。
三.欣赏茶道艺术家的茶汤作品,了解各种茶的不同性质和风格。

5. 茶会进行时与会者要自己动手:
一.与会者自己动手拿碗取水、把碗放回原位等接触动作,可与周遭人事物建立感情。
二.安安心心与自己相处,不必等人侍候,也不必等人来嘱咐,把自己照顾好,人会过得更有滋味。

6. 茶会进行时没有司仪主持流程:
一.茶艺师将带头进入会场,示范怎么洗手、怎么熏香等,展示如何进行茶会的流程,不必有主持人发号施令。
二.与会者一位一位跟随着做,大家在观察、同时身体力行当中建立彼此的默契。没有多余的噪音。



五觉茶会的运作方法:
1. 茶会开始前要进行说明:
茶会开始前15分钟,与会者聚集会场外,由茶艺师解说茶会的形式与理念。

2. 茶会进行时不播放音乐:
一.茶会需要仰赖与会者的视觉、触觉、嗅觉、味觉及听觉的投入来进行,播放音乐反而会造成干扰,与会者将重心放在音乐,反而忽略正在发生的事情。
二.茶会进行时周围环境会有自然的声音,茶壶倒水、倒茶的水声,茶器轻轻碰触的响声,与会者的脚步声等,用心神聆听这些声音,令人更关心及享受周围正在发生的茶事,产生共鸣。

3. 用以淋手的茶汤:
茶汤也应泡得像要喝的茶一样那么有香味,而不能随便泡。洁手时每位只用一杓水。
预备的茶汤要刚刚好,比如1杓水是110cc, 总共四十人份即110cc x 40,得4400cc的基础份量上来准备,或可准备多500cc,以便后面那几杓容易盛取。

4. 用以擦拭双手的纸巾:
每位只用1至2张,四十人份即准备80张即可,不要随便放一叠在那里。就地准备一个盒/盆子,让与会者就地置入用过的纸巾,免得拿在手上不便。

5. 用以提取茶叶放入嘴巴的牙签:

每位只用1支,四十人份即准备40支,不要毫无心思插一把在杯里就算了。

6. 洁手、熏香、和醒神的茶席设置:
必须要有至少2英尺的间隔,不宜靠拢,太过紧密会制造压迫感。分开的茶席设置可让人流顺畅,入场的与会者就不用挤迫在一起等。人多时,以上茶席可设置2套、3套,分路进行。

7. 熏香、醒神的茶叶预备:
每位用3克,如预计有些或许会拿多一点点,约4、5克,茶叶以四十人份算就准备200克。不要随意倒几罐茶叶出来。

8. 品茗-茶道展演的要求:
一.茶道艺术展演由茶道艺术家亲自挑选茶叶。
二.根据茶叶性质,以及要泡出美好 “茶汤作品”之目的设置茶席。
三.茶道艺术家采用娴熟、专业茶法冲泡。
四.根据茶叶的风格来决定茶叶要放多少,水温要多高,浸泡时间要多久,以制作出香味最好的茶汤。
五.这是品茗者通过欣赏茶道艺术家的茶席,泡茶技艺,茶汤作品,以及整个泡茶、奉茶、品茶的仪轨来感受、享用茶道的品茗会。

9. 五觉茶会正式举行时的预算时间(报到、列队时间不算在内),以30人算
1.洁手:20分钟。2.熏香:20分钟。3.醒神:20分钟。4. 品茗-茶道展演:40分钟。



Format of the Five-sense Tea Gathering:

The five-sense Tea Gathering is an activity where we use our senses, namely hearing, sight, smell, touch and taste to experience the tea culture, concentrating on and relishing each moment. With heightened responsiveness, we will be able to appreciate the Way of Tea with inner tranquility.

The Five-sense Tea Gathering consists of 4 steps.

Step 1- Prelude: Hand Washing, Step 2-Entry: Scenting, Step 3-Half-Session: Refreshing, Step 4-Ending: Tea Appreciation.

Notes on the Format:

1. Hand Washing:
Participants line up to enter the venue at an agreed time. ‘Jasmine tea’ is prepared at the entrance where tea art masters scoop up the ‘tea infusion’ for participants to clean their hands. Participants then use the tissue paper to wipe dry their hands, after which the used tissue paper should be disposed at the wooden box.

2. Scenting:

  • Each participant takes a white porcelain bowl and put a pinch of tealeaves into the bowl with three fingers. Bring the bowl to the faucet and fill it half full with hot water. Take a seat (free seating).
  • After taking the seat, cup the bowl with both hands. Lower the head, keep your eyes and nostrils open, and let the ascending aroma and steam fills your eyes and nostrils. (For those wearing glasses, take them off first)
  • Participants must keep silent throughout this step. After scenting, participants could take a few sips of the infusion before putting the bowls back.


3. Refreshing:

  • Each participant takes a white porcelain cup and put a pinch of tealeaves into the cup with two fingers. The tea brewer will pour in hot water to steep the tealeaves.
  • The participant then adds two drops of soy sauce to the tealeaves. Take a toothpick and go back to the seat.
  • Wait until the tealeaves have unfurled. Pick up the tealeaves with toothpick and bring them to the mouth. Chew slowly and swallow. Put the toothpick into the cup and put back the cup.


4. Tea Appreciation-Tea Art Demonstration:

  • Participants take their seats.
  • The tea art masters enter.
  • When the tea art masters are seated, they will begin brewing tea with the “Modern Method for Brewing Tea”. Participants observe and appreciate the art of tea brewing.
  • Tea art masters present the best brew and serve it to the participants.
  • Participants receive the tea and begin appreciating it: 1. Close the eyes and appreciate the aroma, 2. Look at the tea infusion and appreciate the colour, 3. Sip slowly and let the tea stays in the mouth for a while, enjoying the tea fragrance.
  • After 3 rounds of tea brewing, serving and appreciation, the assistants will collect the cups and pass them back to the tea art masters. The tea art masters put the tea cups back on the tea presentation setting.
  • The tea art masters bow and leave.
  • The tea brewing demonstration comes to an end.




The Concept of Five-sense Tea Gathering

1. Hand Washing:
a. Use a large glass bowl to showcase the golden tea infusion reserved for hand washing. The tea infusion is not just visually soothing but also brings about a sense of vitality.
b. The aesthetically pleasing sight is mood lifting. It helps calm the participants’ emotions and restlessness, to make sure they attend the tea gathering in good mood.
c. The tea aroma in the air is invigorating.
d. Let the tea infusion cool down before gently wetting the hands with it. The refreshing feel will run through the body and helps dissipate body heat.
e. The tea infusion helps wash away dirt and keep our hands clean for good hygiene.

2. Scenting:
a. Let the vapor of the warm tea moisturize your eyes to relieve tiredness and stress
b. Let the warm aroma of the tea infusion fill your nostrils, and penetrate and rejuvenate your body.
c. Keep silent throughout this step so that the eyes and nose are wholly occupied by the aromatic vapour.

d. In the midst of tranquility, the body will be totally relaxed and our energy increased.
e. When the ascending steam from the tea infusion has completely dispersed, take a few sips of the infusion to replenish the body’s water.

3. Refreshing:
a. Pick up the moistened tealeaves with a bit of soy sauce with the toothpick. Put it in the mouth and chew slowly.
b. The bitter juice from the tender buds mingles with the soy sauce to offer layered flavor. It awakens our taste buds while bringing about a refreshing and delightful experience.

4. Tea Appreciation – Tea Art Demonstration:
a. Appreciate the tea presentation settings arranged by the tea art masters; understand the relationship between the tea utensils and the tealeaves.
b. Appreciate the art of brewing performed by the tea art masters; understand the different brewing methods for different types of tea.
c. Appreciate the work of tea produced by the tea art masters; understand the characteristics and styles of different types of tea.

5. Participants have to do their parts:
a. By getting the bowl and water, and returning it to the original place, a participant will be able to connect emotionally with the people and things around them.
b. This is a chance to be at ease with oneself. There is no need to be served or prompted. Take care of yourself well and life will be more enjoyable.

6. No emcee to facilitate the event flow:
a. Tea art masters will lead participants to the venue, demonstrate how to wash hands and proceed with scenting, etc, and the progress of the tea gathering; there is no need of an emcee.
b. Participants just need to observe and follow the person in front of him/she, with which a mutual understanding is generated. There is no unnecessary noise.



The practice of the Five-sense Tea Gathering:

1. Briefing before the start of the gathering:
15 minutes before the tea gathering begins, participants gather outside the venue for a briefing on the format and concept given by the tea art masters.

2. No music during the tea gathering:
a. The practice of tea gathering depends on the concentration of our senses, namely hearing, sight, smell, touch and taste. Participants may miss what is going on if they are distracted by the background music.
b. There is sound naturally occurring during the tea gathering, such as the sound of water and tea pouring, of tea utensils touching each other, footsteps of the participants, etc. Listen to these sounds with your heart, and you will be more involved in the tea activities going on, and enjoy a heightened experience of tea appreciation.

3. Tea infusion for Hand Washing:

The tea infusion should be prepared the same way as we normally would for tea brewing. One scoop of tea infusion for each participant will do.
Prepare just the right amount of tea infusion; for example, 1 scoop is equivalent to 110cc; for 40 participants, you will need 110cc x 40 = 4400cc. Prepare 500cc in addition to this quantity; this will make it easier to scoop up the tea at the bottom of the container.

4. Tissue paper for drying the hands:
On the basis of 1-2 pieces of tissue paper for each participant, prepare 80 pieces if there are 40 participants; do not just put a pile there. Place a box/container for the participants to discard the used paper; this will avoid the inconvenience of having to hold it in the hand.

5. Toothpick for picking up the tealeaves into the mouth:
Have one toothpick for each participant; prepare 40 toothpicks for 40 participants. Do not simply put some toothpicks randomly in a cup.

6. Tea presentation setting for Hand Washing, Scenting and Refreshing:
Have a clearance of at least 2 feet in between settings to avoid the place becoming too crowded. Keep different settings apart to ease the flow of participants. Arrange 2 to 3 tea presentation settings if there is a large number of participants.

7. Tealeaves Preparation for Scenting and Refreshing:
Normally, it will be 3 grams for each participant. Provision 4-5 grams for each person instead just in case some may have taken more. For 40 participants, prepare 200 grams of tealeaves. Do not pour out the tealeaves randomly from the tea caddies.

8. Requirement of the Tea Art Demonstration:
a. The tealeaves are to be chosen by the tea art masters for the Tea Art Demonstration.
b. The tea presentation setting is to be arranged according to the characteristics of tealeaves, and the objective to produce the best possible work of tea with the tealeaves.
c. The tea art masters will apply skilled and professional brewing method.
d. The amount of tealeaves, water temperature, and duration for brewing depend on the tealeaves in order to bring out their best.
e. This format of tea gathering enables the participants to enjoy the Way of Tea by appreciating the tea presentation settings, brewing technique, tea infusion, and the ritual of tea brewing, serving and appreciation conducted by the tea art masters.

9. Estimated timing for a Five-sense tea gathering (registration and queuing excluded), based on 30 participants:

1. Hand Washing: 20 minutes. 2. Scenting: 20 minutes. 3. Refreshing: 20 minutes. 4. Tea Art Demonstration: 40 minutes.
