Yi Xing Black Tea is a fermented tea originating from Taihu (Lake Tai) area in Yixing of the Jiangsu Province, China. The area was known as Yangxian during the Qin and Han Dynasties. A poem from the Tang Dynasty has this, "The emperor must savour the tea from the Yangxian area first; or else no plant would dare to bloom". This testifies the long history of tea-making in the Yixing area.
Tea leaves for Yixing black tea are picked during spring season. Only very tiny, tender buds with one leaf or two leaves are used. Made with a traditional process, the tight, stylish tea leaves have a deep shine. They give a rich red infusion with a base note of fruits and nuts, and a refreshing yet smooth mouthfeel with a hint of refreshing sourness and a sweet aftertaste. Rich and mellow, the tea is great to be taken on its own, or laced with fresh milk.

Add tea leaves to brewing vessel until 1/5 filled.
Pre-moisten tea leaves:
Pour fresh boiled water into brewing vessel and drain the tea infusion off immediately. This brew is not for drinking. The purpose is for unfurl and moisten tea leaves, it helps develop the full flavour of tea for a satisfying brew.
Refill the brewing vessel with 95°C fresh boiled water, steep for approximately 30 seconds to extract the full flavour. Serve. It is good for several brews.
